Missoltini are a type of fish found in Lake Como, Italy. The fish are sun-dried and then conserved in barrels of salt and bay leaves under light pressure. It takes a lot of skill and experience to prepare the fish so that they taste just right, therefore the easiest way to buy these fish is to place and order through a local restaurant. Once you have collected your order of missoltini, all that is left for you to do is to take them home and clean them carefully with some warm water to remove the salt and grease. Missoltini are traditionally served with grilled slices of polenta. |
