Pizzoccheri

This cheesy vegetable pasta dish is a typical dish from the Valtellina area of Lake Como.  The pasta looks similar to that of tagliatelle. The preferred type of cheese used is  ‘bitto’ which comes from the Valtellina area and takes its name from the Bitto River in the province of Sondrio. Fresh bitto cheese has quite a mild flavour to it but as it matures, the flavour becomes much stronger and has a tangy taste. Ground parmesan, savoy cabbage, potatoes, sage, butter and salt and pepper are rest of the ingredients in this tasty dish.
